Rachel's Lasagna
Serves 4
Ingredients
- 1–1.5 lbs ground hamburger
- 2 cloves garlic (or to taste)
- 2 jars of your favorite pasta sauce
- Italian seasoning (to taste)
- 1 small container (15 oz) skim ricotta cheese
- 2 eggs, beaten
- 1/4 cup Parmesan cheese
- 2 bags (2 cups each) shredded mozzarella cheese
- 1 box no-bake lasagna noodles
- Cooking spray or butter (to grease pan)
Instructions
Preheat oven to 425°F. Grease a 9x13 glass baking dish.
Brown the ground hamburger with garlic in a skillet over medium-high heat. Drain the grease.
Add the pasta sauce to the meat and stir to combine. Add extra Italian seasoning if desired. Set aside.
In a bowl, combine the ricotta cheese, beaten eggs, and Parmesan cheese. Mix well.
Begin layering in the greased baking dish: start with a thin layer of meat sauce on the bottom.
Add a layer of no-bake lasagna noodles.
Spread a thin layer of the ricotta mixture over the noodles.
Add a layer of shredded mozzarella.
Repeat the layers (sauce → noodles → ricotta → mozzarella) until you run out of sauce. Finish with a final layer of mozzarella on top.
Cover tightly with aluminum foil and bake for 45 minutes.
Remove the foil and broil for 3 minutes until the cheese is bubbly and lightly browned.
Let sit for 5 minutes before cutting and serving.
Note: Each pasta brand has slightly different instructions and timing on the box. Follow the box's ratio guidance but stick with the ricotta, egg, and Parmesan mix regardless. You'll likely have some noodles left over.
